| 1 lb | black beans |
| 8-10 | sprigs of cilantro |
| 1 | small or med onion |
| ½ | small red or yellow pepper |
| 3 C | chicken broth or water |
| 2 C | white rice |
| ½ tsp | salt |
| 1 Tbsp | vegetable oil |
Directions
- Cook beans if necessary.
- Chop vegetables finely.
- Saute rice for 2 minutes in oil over med high flame, then add half vegetables and saute another 2 min.
- Add water or broth, boil, cover and reduce heat, simmer till rice is tender (20-35 min).
- Saute everything together 2-3 minutes.
