  Ingredients
1 lb black beans
8-10 sprigs of cilantro
1 small or med onion
½ small red or yellow pepper
3 C chicken broth or water
2 C white rice
½ tsp salt
1 Tbsp vegetable oil

Directions

  1. Cook beans if necessary.
  2. Chop vegetables finely.
  3. Saute rice for 2 minutes in oil over med high flame, then add half vegetables and saute another 2 min.
  4. Add water or broth, boil, cover and reduce heat, simmer till rice is tender (20-35 min).
  5. Saute everything together 2-3 minutes.
