Dutch Oven - Mexican lasagna

  Ingredients
2 lbs ground beef
1½ tsp ground cumin
1 Tbsp chili powder
¼ tsp garlic powder
¼ tsp red pepper
½ tsp salt
1 tsp pepper
16 oz can tomatoes, chopped
2 C cottage cheese
1 C grated monterey jack cheese with peppers
1 egg
1 bag tortilla chips
½ C grated cheddar cheese
  shredded lettuce
½ C chopped tomato
3 green onions, chopped
¼ C black olives

Directions

  1. In a large skillet (or dutch oven lids), brown ground beef.
  2. Add spices and tomato, heat thoroughly.
  3. In a a medium bowl, combine the cottage cheese, monterey jack cheese, and egg.
  4. Make lasagna style layers of beef mixture, tortillas, cheese mix. Twice. Cover bottom of 12” Dutch oven with half of the corn tortillas, pour beef mixture over tortillas.
  5. Bake at 350 for 30 minutes.
  6. Remove from oven and top with cheddar cheese, lettuce, tomato, green onion and black olives.

Appendix

  • Originally, used corn tortillas and 1 tsp salt.
    • With the tortillas on the bottom.
