| ¼ tsp | red pepper |
| ½ tsp | salt |

| 16 oz can | tomatoes, chopped |
| 2 C | cottage cheese |
| 1 C | grated monterey jack cheese with peppers |
| 1 | egg |
| 1 bag | tortilla chips |
| ½ C | grated cheddar cheese |
| shredded lettuce | |
| ½ C | chopped tomato |
| 3 | green onions, chopped |
| ¼ C | black olives |
Directions
- In a large skillet (or dutch oven lids), brown ground beef.
- Add spices and tomato, heat thoroughly.
- In a a medium bowl, combine the cottage cheese, monterey jack cheese, and egg.
- Make lasagna style layers of beef mixture, tortillas, cheese mix. Twice. Cover bottom of 12” Dutch oven with half of the corn tortillas, pour beef mixture over tortillas.
- Bake at 350 for 30 minutes.
- Remove from oven and top with cheddar cheese, lettuce, tomato, green onion and black olives.

- Originally, used corn tortillas and 1 tsp salt.
