Directions
- Preheat oven to 425.
- Halve bell peppers, remove stem and seeds.
- Peel and chop garlic and chili.
- Drizzle and rub in olive oil to inside of bell peppers. Season with salt and pepper. Bake about 20 mins.
- Melt 1 Tbsp butter in a large pan on medium-high. Add sausage and garlic. Cook about 5 min.
- Add tomato paste and couscous, stir to combine.
- Add 2 C water and a pinch of salt and pepper. Boil and cook, stirring often 8-10 min. Add chili.
- Drain bell peppers, stuff with half of filling. Top with cheese. Broil until cheese melts, only a couple mins.
- Serve peppers on a base of remaining filling.
