Stuffed Peppers

  Ingredients
4 green bell peppers
6 cloves garlic
2 chili peppers
1 lb sausage (any kind)
1 box couscous
1 can tomato paste
1 C shredded cheese

Directions

  1. Preheat oven to 425.
  2. Halve bell peppers, remove stem and seeds.
  3. Peel and chop garlic and chili.
  4. Drizzle and rub in olive oil to inside of bell peppers. Season with salt and pepper. Bake about 20 mins.
  5. Melt 1 Tbsp butter in a large pan on medium-high. Add sausage and garlic. Cook about 5 min.
  6. Add tomato paste and couscous, stir to combine.
  7. Add 2 C water and a pinch of salt and pepper. Boil and cook, stirring often 8-10 min. Add chili.
  8. Drain bell peppers, stuff with half of filling. Top with cheese. Broil until cheese melts, only a couple mins.
  9. Serve peppers on a base of remaining filling.
