Stuffed Potatoes

  Ingredients
3 lbs red potatoes
1 butter stick
1 C sour cream
½ C bacon, cooked and chopped
⅓ C green onion (or chives)
½ C grated parmesan cheese
2 C shredded cheddar cheese

Directions

  1. Make mashed potatoes:
    1. Boil potatoes
    2. Add butter, bacon, sour cream, green onion, parmesan
    3. Mash until smooth.
    4. Add salt and pepper to taste.
  2. Spoon onto baking sheet.
  3. Top with cheddar cheese.
  4. Bake at 350 degrees for 20-25 minutes (cheese is melting and starting to brown).
